Typical of the area of the Lessini Mountains, on the hills between the provinces of Vicenza and Verona, is capable of giving wines from the acidity relevant, due to the high content of malic acid, which are well suited to the production of sparkling wine according to the Classic Method.

|Vinification||Pressing in a gentle manner with a temperature of 10-12° C. The first fermentation takes place in tanks thermo-controlled with a temperature around 15-18° C. the average Time of fermentation in tanks: 20 days.|
|Maturation||On its own yeasts in bottle, not less than 60 months. Remuage sûr pupitres: maturation is completed, the bottles are taken from the piles and strung to the neck in the pupitres, are rotated by hand every day for about 30 days.|
