Raw materials: Old variety of bordeaux red varieties, derived from vitis viturica. Very widespread in France, it was easily subject to leaking (abnormal production of clusters composed of a few acini) and for that was abandoned. In Italy it has always survived on the Colli Berici, where it can reach full maturation.
Artisan distillation: still the FRATELLI BRUNELLO Distillery uses a batch plant with direct steam, one of the few still in business, which is conducted at low pressure and low temperature. It is composed of 4 boilers strictly in copper, as tradition has it. The cycle of distillation is very slow and involves the processing of small batches of pomace (cooked), the duration of which is about an hour and a half.
