Grappa of Amarone della Valpolicella Monovitigno Fratelli Brunello
Valuable young grappa, obtained from the pomace of Corvina, Corvinone, Rondinella and other native grapes destined for the noble Amarone della Valpolicella (Veneto).
Distilled with artisanal method, it is intense with fruity notes. On the palate it is soft, frank and full of aroma.
It is perfectly enhanced with a tasty cheese with 60% cocoa dark chocolate. Accompanies a good, not too old artisan cigar.

Raw material
Pomace of Corvina, Corvinone, Rondinella and other native grapes, carefully selected and dried in traditional racks, at some companies in Valpolicella (Veneto).
The grapes are pressed from the end of January to the beginning of February, to produce the noble Amarone.
After fermentation (40-60 days), the pomace is separated from the wine, placed in special closed containers and immediately destined for distillation to preserve all their qualities.
Artisanal distillation
The FRATELLI BRUNELLO Distillery has always used a discontinuous direct steam system, one of the few still in operation, conducted at low pressure and low temperature. It is made up of 4 boilers strictly in copper, as tradition dictates.
The distillation cycle is very slow and involves the processing of small batches of (cooked) marc which lasts about an hour and a half.
Seasoning
Grappa di Amarone is bottled after three / four years of aging, in inert steel containers, enhancing all its organoleptic qualities to the maximum.
Tasting
When tasted, it has an intense aroma with fruity notes. On the palate it is soft, frank and persistent. Particular the notes of small red fruits. A grappa with great personality, dry and clean.
Service and Pairings
10-15 ° C in tulip-shaped glass. At the end of a good dinner with a tasty cheese, this grappa is also enhanced with a dark chocolate 60% cocoa. It can also accompany a good not too old artisan cigar.
