Raw material
Obtained from the distillation of a blend of fermented red pomace from wineries in the Berici Hills and in the province of Vicenza (Veneto).
Artisanal distillation
The FRATELLI BRUNELLO Distillery has always used a discontinuous direct steam system, one of the few still in operation, conducted at low pressure and low temperature. It is made up of 4 boilers strictly in copper, as tradition dictates.
The distillation cycle is very slow and involves the processing of small batches of (cooked) marc which lasts about an hour and a half.
Seasoning
It rests in inert steel containers for at least three long years during which, thanks to a slow evolution, it is rounded and takes on softer and more delicate olfactory sensations.
Tasting
Despite aging, Grappa Vicentina retains a strong taste-olfactory personality.
Its scent recalls fermented marc and bitter almond while on the palate it is warm, harmonious and balanced.
