The marc, since their arrival in the distillery, it is treated and stored with Grappa System®, a system conceived by Roberto Castagner, thanks to which you can give life to a controlled fermentation with the addition of select wine-making yeasts. Grappa System® also ensures that pomace is kept in an ideal, healthy environment with the right pH level, inside the tunnel plastic film for food, high pressure and in the absence of oxygen. This is the secret that allows the pomace to keep its aromas intact, even for several weeks, in a natural way.

Distillation
Takes place in part in traditional stills in a water bath, and partly in technologically advanced plants in such a way as to obtain the maximum yield of the aromatic and the maximum fineness on the palate.

The aging
The grappa is matured in barrique barrels of 225-litre oak barrels for a period of over 18 months, of the same type used for the aging of Amarone wine of the Valpolicella.

Organoleptic characteristics
The olfactory sensations are intense and harmonious, with notes of spices and forest fruits, together with hints of vanilla and honey acquired during the refining process. In the mouth it is round and structured, soft and persistent.
