The brothers Federico and Silvia Stefini formally found and lead the project and the cellar of 1701 today. Together with their collaborators they take care of the eleven hectares of one of the oldest wine-growing properties in the area, three hundred years of history and an extraordinary vineyard of four hectares surrounded by 11th century walls. We work on the basis of a choice shared with conviction: the principles and methods of organic and biodynamic viticulture. This approach, far from any forcing and chemical intervention, is also a philosophy of life, a way to approach the vineyard, understand it and respect it in its life cycle until, in the bottle, it fully expresses its vitality, character and virtue: first of all authenticity and maximum enhancement of the terroir, in all its expressions.
Aimery Producteurs is the producer of Aimery Producteurs Crémant de Limoux Brut 1531, a sparkling wine from Cremant de Limoux and with 12% alcohol in the volume. Amery from the Limoux area, the French region at the foot of the Pyrenees makes wine exclusively from local grapes and has large aging cellars. Aimery is characterized by superior quality products, with quality standards at the highest levels.

The winemaking cellar is the heart of Altùris, the safe of our wines.
We wanted to create it in a hollow at the base of the hills: in this structure rich in high technology and design all our grapes come together. The production is destined for 70% to white wines and 30% to red wines.
The history of the brand began during the second world war. Having been wounded in battle, André Delorme left the front and returned to Rully in the Burgundy region. On his return in 1942 Andre Delorme founded his company. Its wines and cavas (sparkling wines quickly achieved a reputation and have been selected by the best restaurants. A few years after he joined the child company; new vines were planted and the area grew to cover a wide range of names, among the most respected in the Côte Chalonnaise. In the course of the years, the reputation of the wines of the area went beyond the French borders.
In 2005, the company took a new direction: Eric Piffaut, director of the family business, Veuve Ambal, also based in Rully, was taken at the Maison André Delorme.
At the foot of the hills of Conegliano, where the forces of nature still seem to be free to interact with man and where a fabulous microclimate caresses the crops, there is the Corbanese di Tarzo “basin”. The company Anfosso is of ancient origin. The production of the Rossese of Dolceacqua comes from our own grapes from the vineyards of the Soldano, San Biagio della Cima Liguria. It is a brilliant ruby red color, the nose is dominated by the fruity note of cassis and wild strawberry.

With four trunks of gallery arranged in a Greek cross, it could hold six thousand hectoliters of wine, an enormous amount for those times. Hence the nickname given to it by the locals: “el cantinù”, the Cantinone. On the death of cav. Rossetti follows a slow decline and everything seems over, but at the end of the 70s another "wine man" bursts into the "life" of the Villa: Franco Ziliani - owner of Guido Berlucchi - the visit, finding it in desolating conditions, but captures the enormous charm and uniqueness of the cellars.
