Cannubi is a long hill with a gradually increasing placed at the center of the area of Barolo. There the soils of the time Elveziana and Tortonian meet and blend together creating a marl grey-blueish, rich in carbonates of magnesium and manganese, which, on the surface, they become shades of grey-whitish in the result of the action of the atmospheric agents: mixed clays to very fine sands that are impregnated of a strong component of limestone (marls of Sant'agata fossils). Surrounded by systems hill high is protected from atmospheric disturbances and from the excessive ventilation and enjoys a microclimate all the more special, unique. The characteristics of the soil and its enviable microclimate give Cannubi completeness and equilibrium, a harmonic synthesis between structure and aromas and elegant tannins, combining the responsiveness of consumption to extraordinary longevity.

|Vinification||Racking only takes place when all the sugar is transformed into alcohol. Racked into cement tanks, specially made with a cork insulation, the wine maintains the desired temperature post-fermentation 22°|
|Maturation||A part of the wine is refined for about two years in Slavonian oak casks and French oak barrels, the remaining part is refined in small French oak barrels, medium toast. Refining in bottle for 12 months|
