The vineyards, planted after the DOCG specification, must have a density of at least 5000 plants per hectare.
Maximum production of grapes per hectare 70 quintals
The production per vine must not exceed 1.8 kg. The grapes intended for vinification must ensure, at the time of harvest, a minimum total alcoholic strength by volume of 11.5%

Aleatico is the autochthonous vine par excellence, it covers about 40 hectares out of 170 cultivated for the production of Elba Doc; it has a delicate and thin skin and cannot stand a long stay on the plant after ripening, it has a very low yield. Natural passito non-liqueur, of extraordinary elegance and aromatic intensity. Most producers tend to put the last harvest on the market, while some prefer a year of aging instead.
The Elban tradition wants it combined with the schiaccia briaca, a typical dessert made with raisins, pine nuts, dried fruit and, indeed, aleatico.
As a further confirmation of the excellence of the product, it was recently awarded the 8th DOCG of Tuscany. Great result strongly desired by Elban producers who have worked with dedication and commitment in recent years for this.
