- The grapes are pressed and destemmed and the pomace obtained is left to macerate in contact with the musts. Frequent pumping over allows excellent color extraction and good body.
- Maturation
- Malolactic fermentation is carried out and then the wine is placed in 15-20 hectoliter barrels for about 12 months. This is followed by aging in the bottle for at least 4 months.
