Bogheri Rosso DOC "Pievi" Fabio Mottola
The grapes harvested when fully ripe are fermented exclusively with natural yeasts in truncated conical vats of thirty quintals, the cap is submerged manually for the entire duration of the fermentation which normally takes 2 weeks for each variety. After the racking, the wines are placed in second or third passage barriques, in which the malolactic fermentation takes place naturally. The blending of the three varieties takes place about three months after the harvest. The wine is aged in wood for a year and is bottled without filtering or clarification.
Colour: intense ruby red
Nose: intense notes of black fruit, violet, tobacco
Palate: fresh fruit corresponding to the nose, balsamic notes. Ripe tannin, great balance between alcohol and aromatic component. Sapidity.
