Color: dark garnet-cherry red
Bouquet: fruity scents of morello cherry, blackberry, including almond, are prevalent on the spiciness (white pepper) typical of the grape and on the notes due to aging in wood, vanilla and menthol; it has a real composite and enveloping bouquet
Taste: sweet but without excess where the spicy perception becomes more pronounced in the mouth with persistent notes of cinnamon
The vinification takes place after a drying of the grapes, collected in special boxes, for a minimum of thirty days according to the conditions of the year. Once the right degree of drying is reached, alcoholic fermentation is carried out. The latter takes place at a controlled temperature, with thermal changes, over the course of 4-5 days. Subsequently the marc is removed, fermentation is completed and the coarse lees are deposited. At this point the new wine is placed in barriques, where it remains, undergoing several decanting, for about two years and, after bottling, it undergoes, before being sold, a further refinement in the bottle for at least one year.
