20% of the bunches, harvested by hand at the end of September, are placed in the fruit cellar for a light drying of 40 days. After this date the grapes are vinified in "red" and remain to refine in small French and American oak barrels of first and second passage for 14 months. The remaining 80% is fermented in a winemaker at a controlled temperature between 26-29 ° C. After a stop in steel, part of the wine matures for 16 months in small French oak barrels and part matures for 22 months in 32 and -57 hl French oak barrels.
