- Manual harvest and selection of grapes. Destemming of the bunches and subsequent slow fermentation at a controlled temperature and delicate handling of the must in stainless steel tanks.

- Malolactic fermentation and aging for 12 months, partly in large wooden barrels (30%) and partly in barriques (70%). A third of new barrels are used for aging in barriques. Assembly three months before bottling.
