Vinification | The ripe grapes, after being destemmed and mashed, ferments for 12-14 days in stainless steel tanks at temperature. During fermentation it undergoes frequent pumping over to extract all the tannins, polyphenols and extracts. |
Maturation | Following the malolactic fermentation, which is early and spontaneous, at the beginning of December the wine goes into second passage barriques for a short stay of 6 months. This is followed by an aging of 6 months in the bottle. |
