Vinification The ripe grapes, after being destemmed and mashed, ferments for 12-14 days in stainless steel tanks at temperature. During fermentation it undergoes frequent pumping over to extract all the tannins, polyphenols and extracts.
Maturation Following the malolactic fermentation, which is early and spontaneous, at the beginning of December the wine goes into second passage barriques for a short stay of 6 months. This is followed by an aging of 6 months in the bottle.
