Vinification
The ripe grapes, after being de-stemmed and mashed, ferments for 12-14 days in stainless steel tanks at temperature. During fermentation it undergoes frequent pumping over to extract all the tannins, polyphenols and extracts.
Maturation
Following the malolactic fermentation, which is early and spontaneous, in early December the wine passes into second passage barriques for a short stay of 6 months. This is followed by an aging of 6 months in the bottle.
