We tried to reproduce an authentic Valpolicella Doc Superiore, as it once was.
The late harvested grapes are immediately freshly pressed.
We find in the glass a wine of great structure, which maintains a nice acidity with a really interesting balsamic note.
It ages for about 18 months in tonneaux and then in the bottle.
