The harvest is manual and alcoholic fermentation takes place in small truncated conical wooden vats with manual fulling and long macerations. The malolactic fermentation takes place in 40-hectolitre oak barrels where the refinement continues for at least 18 months and the refinement in the bottle is at least 12 months.
