Valpolicella Classico Superiore Ripasso Tamburino Sardo
The production phase of this wine begins with a short period of drying of the grapes. Subsequently these grapes are pressed and fermented for 20/25 days in contact with their skins.
This is followed by refermentation in contact with the Amarone marc, which exploits the residues of must-wine retained in them, a traditional technique, used in the area of origin, to enhance the Valpolicella Superiore. From this second fermentation we obtain a product with a peculiar structure and known with the name of Valpolicella Superiore Ripasso.
Strong ruby red color; intense, elegant aroma; aromatic complexity that is proposed with fruity notes with a prevalence of cherry and morello cherry; savory to the taste, spicy and of good texture, these are the characteristics that make this wine unique in its kind.
The grapes come from the historic area of Marano di Valpolicella (Classic area). It ages for 16 - 18 months in steel barrels; 6 months of bottle aging.
The decision not to use oak barrels, called barriques, was determined by the desire to create a wine as close as possible to the typical flavors that characterize the grape growing area, which is well known for its geomorphological characteristics , gives a slightly astringent hint on the palate with flavors of ripe cherry and a sweetly vanilla persistence.
Valpolicella Superiore Ripasso is particularly suitable to accompany the wide range of various meat dishes, especially grilled, roasted and traditional boiled meat with the traditional Veronese “pearà”; red meats, game, hard and aged cheeses. It is recommended to serve at a temperature of 16-18 C and uncork one hour before consumption (if possible).
