COLOR: Bibo is revealed with a soft pink color reminiscent of peach blossoms. The intense and exuberant foam is accompanied by a fine and particularly velvety perlage on the palate.
BOUQUET: The scent is captivating from the first delicious hints of small red fruits, currants, cherries and wild strawberries that fade on pleasant spicy notes and hints of orange peel.
TASTE: In the mouth it is persistent and lively: the fragrant note of acidity and light tannic notes make it intriguing.
Bibo is excellent both alone and "throughout the meal", except with desserts. The freshness and delicate tannins make it ideal for compensating for the fatness of some foods, such as cured meats and sausages, medium-aged cheeses and fried sea and land.
The excellent structure of Bibo enhances the classic first courses of the Italian tradition based on meat sauces, such as the traditional meat sauce or duck ragù. Delicious when paired with autumn risotto with porcini mushrooms or truffles. Great is the marriage with a classic Mantuan risotto: risotto alla pilot.
The freshness and fine perlage perfectly accompany grilled meat, fish and vegetables. Thanks to its backbone and elegant tannins, it can stand up to seconds with a certain body such as pigeon, beef and lamb. An alternative and elegant combination is with Neapolitan pizza or with classic street food such as cheeseburgers and kebabs.
