It is the company's cuvée, which comes from the assembly of grapes from different vineyards on the Pressano hill. The composition of this Blanc de Blancs also includes the use of reserves from previous vintages which brings considerable complexity, without however weighing down the wine. Only after 40 months of aging on the lees is the cuvèe ready to leave the cellar.

We maintain a low dosage to preserve the organoleptic qualities of the base wine as much as possible. Extra Brut with 3 g / l of residual sugar. Topping up is done with the same starting base wine.

|Vinification||The pressing is very soft and the yield does not exceed 55%. A very clear must is obtained which rests for a few hours without adding sulfur.|
|Maturation||Alcoholic fermentation takes place in stainless steel tanks and partly in used barriques. This is followed by malolactic fermentation and 8 months of aging on the yeast. At the end of this period the assembly is done.|
