Extra Brut NOVE is born from the assembly of different vintages, of which a part of Riserva Metodo Solera aged in wood. It stood on the lees for over nine years before being disgorged.

I only produced a few hundred bottles and it does not need a long presentation: it is for connoisseurs, for those who love the oxidative notes of old Champagnes and are enthusiastic when - warming up in the glass - the wine releases captivating tertiary aromas, of spices and peat. In the mouth it is long and complex, with notes of walnut, honey, spices, tobacco and mushrooms, supported by a fine and polite bubble.
I gladly taste it not too cold, in a large glass, at the end of dinner, perhaps with a goat cheese, preferably aged. It's a chat bubble, because it doesn't confuse your head and make your heart speak.
