Classic Method Extra Brut Dieci Buvoli
The DIECI Extra Brut Classic Method sparkling wine is born from the assembly of bases from different vintages, of which a part is aged in wood, and has refermented in the bottle for over 10 years.
The color is warm and charged, and prepares for the decisive tertiary aromas that immediately envelop the nose, before enriching with dried fruit, cooked apple and brioche bread. In the mouth it has a unique expressive power, with evolutionary and spicy notes supported by a strong and lively acidity.
It is an absolutely meal bubbly and a great conversation glass after dinner. After pouring it into a large glass, I recommend waiting a few minutes before tasting it, to allow the wine to open. It is undoubtedly my sparkling wine with the most personality and character, although I am aware that many consider it a bit too extreme due to the marked evolutionary notes. In blind tastings, however, it is the one that almost always obtains the highest score thanks to its extraordinary power and aromatic persistence. As usual, it's up to you to judge and whatever you think of this sparkling wine, you are right and he won't change.
