The whole grapes, all coming from the same year of harvest, are softly pressed and only the first pressing part, the must-flower, is used. After the first fermentation and the addition of the liqueur de tirage, the wine is bottled in characteristic dark green champagne bottles (tirage). The Equipe5 bottles, arranged horizontally in the underground cellars of Borgo Rocca Sveva, begin a slow refermentation. The refinement in the bottle is always over 36 months and the remuage is done manually, according to the traditional method. After disgorgement, the liqueur d'expedition is dosed: now Equipe5 is ready to be tasted.
