C. is obtained from the selection of the best grapes of Sorbara hand-picked in boxes of 17 Kg. max. The grapes are treated with care to avoid any damage during transport and arrival at the cellar.

The must is submitted to clarification followed by alcoholic fermentation in stainless steel vats at controlled temperature. After six months, is added to yeast carefully selected and bottled.
The bottles come to the end of secondary fermentation, placed horizontally at a constant temperature of 12°C.
After the remuage and subsequent disgorging it proceeds with the addition of the liqueur d'expédition.
