|Vinification||Crushing and stemming immediately upon arrival in the cellar the grapes harvested at a temperature of 22°C and gentle pressing. Cooling of the must at 15°C and decant for one night. Racking of the must clean with inoculation of selected yeasts.|
|Maturation||Fermentation at 18°C for 12 days. Racking and refinement in stainless steel vats, where it remains for 3 months on its own yeasts.|
