Very demanding aromatic variety in both agronomic terms of terroir. Gewürztraminer is one of the first varieties to sprout, it gives its best on exposed slopes and having a compact bunch it prefers well-ventilated vineyards.

To achieve optimal ripeness it is crucial to have a sunny September and for our part, we maintain low yields, around 50 q / ha of grapes. It produces an intensely aromatic and spicy wine, where it is very important to preserve the acidity of the grapes to balance the structure.

|Vinification||The hand-picked grapes are pressed and macerated for about 6-8 hours before pressing. Fermentation takes place in stainless steel tanks and the wine subsequently remains in contact with its own yeasts until spring.|
|Maturation||Fermentation is stopped on a small part of the total volume, in order to preserve a slight natural residual sugar. The wine is bottled at the end of the summer following the harvest and marketed in the autumn.|
