The passion for the archaeological recovery of the ancient vineyards of the area has led them to the rediscovery and enhancement of numerous micro-vineyards. The vineyards are scattered over the surrounding land and divided into many small plots: hence the name of “Centovigne”, but also a great variety of soils and therefore of possible enological choices. The production approach is aimed at minimizing the use of chemical products: interesting in this sense is the recovery of old concrete tanks for aging to reduce the use of other materials and enhance the heritage of the selected grapes as much as possible. .
