Pedro Ximénez is a white grape variety adapted to the climatological and cultivation conditions of Southern Spain. It has a semi-rigid bunch, its skin is smooth and slightly pigmented.

The mahogany color of this wine is obtained, in part, through drying due to exposure to the sun, called "soleo", and in part, through oxidation in the barrel. Natural dehydration increases in relative terms not only the volume of sugars but also that of acids and mineral salts: this means that, despite having a high natural density, the wine obtained over the years is not heavy to the palate.
