Riesling is a late ripening vine which, grown in the high areas of the vineyard, develops its unmistakable aromas to the fullest.
The harvest takes place strictly by hand between the beginning and mid-October after which the grapes are processed with great care and transported in large acacia wood barrels where fermentation takes place. This is followed by an aging of ten months on coarse lees, always in the same barrels.
After bottling, the Riesling is stored in the company for another 12 months.
