Vitovska Castle of Rubbia
Intense yellow tending to golden, wide and intense bouquet with aromas of dry hay and chamomile, acacia honey and white pulp fruit. On the palate it is full-bodied, enveloping, with a dense aromatic texture innervated by a long mineral trail.
Recommended pairings: risotto with wild asparagus "Brčšika" from San Michele del Carso, risotto with nettle, omelette with herbs, robust soups such as the typical "Jota" and delicately aromatic first courses, including marine ones.

- Aging for at least 12-18 months on the lees and waiting for all the physical processes of the wine: malolactic fermentation, stabilization. Bottling after 3 years without filtration.
- Maturation in used Slavonian oak barrels, bottling without filtration after 2 years. Refinement in the bottle for at least one year.
