Maison Jaffelin is a historic winery located in the heart of Beaune, Burgundy, founded in 1816 by the Jaffelin brothers. It is considered the smallest of the great houses in the region. The winery is housed in the ancient "Caves du Chapitre", dating back to the 12th century, once used by the Chapter of the Collegiate Church of Notre-Dame to store wines intended for the Church and dignitaries. Even today, the wines mature in these cellars, keeping alive a centuries-old tradition. After a complete renovation in 2004, Maison Jaffelin has integrated modern technologies while preserving artisanal methods, such as the use of oval wooden vats and a vertical press. Winemaker Marinette Garnier, at the helm since 2011, produces "hand-crafted" cuvées that express the different nuances of the Burgundian terroirs. Production includes Pinot Noir and Chardonnay from villages such as Rully, Santenay, Gevrey-Chambertin and Nuits-Saint-Georges, as well as Crémant de Bourgogne in both rosé and blanc de blancs. Maison Jaffelin is the only winery still operating in the historic center of Beaune and offers guided tours and tastings in its evocative medieval cellars.
