Ophelia wine was born from the desire to experiment. The great potential of Aglianico grapes, renowned for their hardness, sharpness, large quantities of sugar and high alcoholic potential. From their delicate processing comes the rosé, fragrant, enveloping, gentle, but at the same time full-bodied, structured and with a strong impact, which captivates with its hints of peach and wild rose, with a full, warm and persistent taste.
Pre-fermentation maceration method and duration: The Aglianico grapes, after destemming and crushing, remain in contact with the must for approximately 2/3 hours, so that the maceration extracts the right amount of color and aromas from the skins, then follows rapid separation of the must from the skins and soft pressing of the pomace. Fermentation tank material: 316 stainless steel; Fermentation temperatures: from 12°-15°C; Fermentation duration: 20 days.
