A perfect balance of sapidity and acidity, played on the richness of the volcanic earth from which it takes shape.
The foam is dense, creamy and persistent; the perlage is fine, long-lasting, and the color is crystalline white. The nose exhibits mineral notes flanked by balsamic sensations, and nuances reminiscent of ripe hay. It is soft, silky to the touch, with very fine bubbles and a good balance between acidic and sapid components.
