In the heart of Salice Salentino, stands the Castello Monaci. The Castle and the Winery are surrounded by about 3000 olive trees and 150 acres of vineyards that represent one of the most significant models of the innovative vineyards of salento. The vineyards are cultivated with the spurred cordon. Below the first clay layer of about 1 meter to the roots to meet a wide range of tuff, the typical white stone that is porous and crumbly. In periods of great droughts it acts as a water resource for the screw, giving the wine a minerality to the wines.
