It comes from a careful selection of Pinot Noir grapes grown in our pedo - hilly vineyards with clayey limestone soils. The care in the field, the manual harvest and an accurate vinification preserve all the qualitative peculiarities from the bunch to the base wine, followed by the bottling for the second fermentation with a long aging in contact with the yeasts of about 24 months at controlled temperatures and away from light sources. The peculiar conformation of our bottle allows an optimal refinement between yeasts and wine.

Using only organic techniques, cultivating without using synthetic molecules but only substances of natural origin. No mineral fertilizers, but only organic compost if necessary, it provides organic substance, no weeding but mechanical processing under the row, more expensive but respectful of the soil, no synthetic anti-molds but only copper and sulfur, in controlled and constantly reduced dosages .

Color: white gold with light straw-yellow reflections, brilliant and crystalline. Soft and creamy foam of great persistence. Subtle, elegant and continuous perlage.
Bouquet: Pinot Noir is found in its maximum expression. Good structure and creamy fullness with a fresh and persistent finish.
Pairings: ideal for the whole meal, it accompanies some typical dishes of Franciacorta and enhances rice-based dishes, pasta, white meats, fish, fresh and medium-aged cheeses.
