An ancient vine such as Pecorino gives an organic white with a persistent and harmonious flavor, slightly balsamic, which is remembered for the notes of pear, peach and lavender flowers.
The grapes, such as Nebbiolo (Chiavennasca), Prugnola and Rossola, from the Grumello sub-area, are vinified "in red" with a medium-long maceration. After 2 months in steel and 18 months in large 80 hl Slavonian oak barrels, followed by another 4 months of aging in bottle.
Clear wine with a straw yellow color with greenish reflections; the nose is fine and delicate, with hints of golden apple, pineapple and banana. It is a very versatile wine, used as an aperitif and can be sipped on any occasion; excellent with fish, it prefers delicate dishes.
Passerina grapes are grown in sandy but basically calcareous soils, offering a white with a fresh flavor and particular notes of golden apple, wisteria and lime. A white to combine with fish dishes, fresh cheeses and stretched curd cheeses.
Wine produced in an alpine environment using Nebbiolo grapes vinified in white. The geological origin of the land dates back to the collision between the African and European plates that gave rise to the Alps. The great variability of the resulting rocks give minerality and elegance.
