Lugana doc has a straw yellow color with light greenish reflections. The nose is very intense, floral and fruity with hints of white flowers, banana, citrus fruits, apricot, peach and almond. On the palate dry, fresh, harmonious, warm with excellent persistence. Return to nasal aromas, excellent...
Custoza Superiore DOC Ca 'del Magro is perfect with oysters, sushi, sashimi and all raw fish. The pairing with white and red meats is also interesting. The combination with the glazed duck is excellent.
The grapes, such as Nebbiolo (Chiavennasca), Prugnola and Rossola, from the Grumello sub-area, are vinified "in red" with a medium-long maceration. After 2 months in steel and 18 months in large 80 hl Slavonian oak barrels, followed by another 4 months of aging in bottle.
Color: Intense yellow with golden reflections. Bouquet: Hints of ripe banana pulp, medlar peel and acacia flowers. Taste: Round and persistent in the mouth with an alcohol content capable of highlighting a dense and white tannic texture as a corollary of a vegetable and mineral acidity.
Wine produced in an alpine environment using Nebbiolo grapes vinified in white. The geological origin of the land dates back to the collision between the African and European plates that gave rise to the Alps. The great variability of the resulting rocks give minerality and elegance.
From Pecorello grapes, an ancient native Calabrian vine to be rediscovered and valorised. For us, Ippolito is proud of passionate research.
