Old vineyards of Tocai Italico that we have continued to look after, perhaps against the tide, perhaps a little out of fashion, but with the patience of "those who believe in it". A vine not very common here today, slowly rediscovered, which gives us a wine of great pleasure. The color is straw...
The grapes, such as Nebbiolo (Chiavennasca), Prugnola and Rossola, from the Grumello sub-area, are vinified "in red" with a medium-long maceration. After 2 months in steel and 18 months in large 80 hl Slavonian oak barrels, followed by another 4 months of aging in bottle.
Wine produced in an alpine environment using Nebbiolo grapes vinified in white. The geological origin of the land dates back to the collision between the African and European plates that gave rise to the Alps. The great variability of the resulting rocks give minerality and elegance.
The name emphasizes the origin of the vine on the slopes of Monte Vulture. Characters such as freshness, fragrance and finesse in the typical aromas of the hill, blend with the radiance and generosity that are exclusive to the south.
From Pecorello grapes, an ancient native Calabrian vine to be rediscovered and valorised. For us, Ippolito is proud of passionate research.
