The Cellar of the Time was founded in 2010 on the initiative of a group of friends and lovers of wine who have asked Christian Bellei to share a new project in the wine sector: to give continuity to the production of wines of the territory of modena, according to the Classic Method widely used in France, better known as the Champenoise Method, that is the one of the natural fermentation in the bottle.
The Lambrusco di Sorbara Spumante D. O. C. is obtained from the best grapes of Lambrusco di Sorbara grapes vinified in purity. The wine carries out the secondary fermentation in the bottle, according to the traditional method.
This Lambrusco presents itself with a beautiful “dress” soft pink, streaked with foam, delicate in its bubbles of carbon dioxide. Olfactory magic with a bouquet full of memories aromatics of raspberry and wild strawberry, combined with notes of old rose and shades of pomegranate.
