Blanc de Noirs is obtained from the soft pressing of the best Pinot Noir grapes from our hilly Riccò vineyard, rigorously harvested by hand, in crates. The clusters are treated with care to avoid any damage during transport and arrival in the cellar. Only the free-run must, with higher acidity and minerality content, is fermented in steel vats at a controlled temperature. In the spring following the harvest, the sparkling wine is made according to the traditional classic method of fermentation on the yeasts, in the bottle, at a constant temperature. The bottles remain in aging for 62 months so that the wine can express all its complexity. Then follows the dégorgement and the addition of the liqueur d'expédition.
