Harvested at the end of September, the fermentation, which lasted about 20 days, took place in 30 Hl concrete tanks. After racking, the wine rested for 18 months, partly in cement and partly in second passage oak barrels from the Barolo area. Finally it rested in the bottle.
Intense purple red color. On the nose the varietal aromas of red fruit are evident, where cherry prevails. There are also evident spicy notes of pepper and chocolate. On the palate it is balanced, with a good persistence and a soft and elegant tannin. It goes well with first courses, grilled...
With this wine we intend to recover a lost tradition and taste. Continuous studies, research and experience in the production of the Classic Method allow us to reinterpret the method of refermentation of wine in the bottle. Produced exclusively with Pignoletto grapes grown on the farm.
