Raw material
White grape variety, the Zibibbo or Moscato di Pantelleria is a grape originating from Egypt which spread to the Mediterranean basin thanks to the Romans. Introduced by the Moors, it takes its name from the Arabic word zabib, which means “dried grapes”.
It is a vine of the plain, medium and high hills, which has found its ideal soil on the island of Pantelleria. It is still cultivated according to the ancient Arab technique, exclusively manual: on terraces, in small circular holes, to defend it from the wind and drought.
Artisanal distillation
The FRATELLI BRUNELLO Distillery has always used a discontinuous direct steam system, one of the few still in operation, conducted at low pressure and low temperature. It is made up of 4 boilers strictly in copper, as tradition dictates.
The distillation cycle is very slow and involves the processing of small batches of (cooked) marc which lasts about an hour and a half.
