Our Cuvée Ginevra has a refined and solid essence.
It knows how to combine both dishes with delicate and more structured flavors.
It is made entirely of Garganega grapes which are chosen and selected directly from the vine, during harvesting at the cash desk.
As required by the traditional method of the Classic Method, the Cuvée is the result of two fermentations, first in the tank and then in the bottle.
In the forty months of rest that follow, it evolves and matures thanks to the lysis of the yeasts, with the release of aromas deriving from cellular breakdown.
This is the nature of its composite and robust character.
The soft and abundant foam and the fine perlage are delicate on the lips.
Its yellow shades like its variegated scent are reminiscent of exotic fruit, honey and chestnuts.
A complex and intriguing taste with spicy and tertiary notes.

- Careful selection in the vineyard during the harvest of the grapes in the crate, soft and progressive pressing of the bunches with fractionation of the musts and alcoholic fermentation in steel tanks at a controlled temperature.
