Vintage Collection Dosage Zéro has no addition of liqueur d'expédition (dosage syrup added in minimal quantity in the other Franciacortas during the degorgement phase). A pure, sincere Franciacorta, the result of the best expression of an extraordinary terroir and of the man who understood its character and potential. Intended for that public of connoisseurs who love this style. Excellent aperitif, excellent to accompany seafood and raw fish.
The Franciacorta Vintage Collections are the result of a careful selection of the grapes and a skilful vinification conducted in full compliance with the Ca 'del Bosco Method. The grapes, freshly picked by hand in small boxes, are classified and cooled. Each bunch is selected by expert eyes and hands, to then benefit from the exclusive "terme degli acini". A particular system of washing and hydromassage of the bunches, through three soaking tanks and a drying tunnel. After pressing in the absence of oxygen, all the musts of the base wines ferment in small oak barrels. To seek the maximum aromatic complexity and expressive power, without losing elegance, the barrel elevation has a duration of only 5 months. A pair of floating tanks allows the decanting of wines by gravity, from small barrels to aging tanks. After 7 months from the harvest, the cuvée is created. The Vintage Collection Dosage Zéro 2016 is the result of a skilful combination of 28 base wines of Chardonnay, Pinot Bianco and Pinot Nero that give the finished product a particular profile, pure and sincere, the result of the best expression of the terroir and of the man who he sensed the character and the potential.
The dégorgement takes place in the absence of oxygen, using a unique system in the world, designed and patented by Ca 'del Bosco. This avoids oxidative shocks and further additions of sulphites, making our Franciacortas purer, more pleasant and longer-lived. Finally, each packaged bottle is uniquely marked, to guarantee its traceability.
