Among the Franciacortas of Ca 'del Bosco it is the one that best manages to express the character of the territory and the peculiarities that celebrate each vintage. The trend of climatic phenomena always writes unpredictable stories. And in the ending is the product of the love between man and the earth. Since 1978 the Brut Millesimato is born only in quality harvests. The result of careful vinification, but above all of a long refinement that enhances its characteristics: four years of permanence in contact with the yeasts. An unmistakable, structured, full, intense and persistent Franciacorta. A wine for important occasions, special with haute cuisine fish dishes.
The Franciacorta Vintage Collections are the result of a careful selection of the grapes and a skilful vinification conducted in full compliance with the Ca 'del Bosco Method. The grapes, freshly picked by hand in small boxes, are classified and cooled. Each bunch is selected by expert eyes and hands, to then benefit from the exclusive "terme degli acini". A particular system of washing and hydromassage of the bunches, through three soaking tanks and a drying tunnel. After pressing in the absence of oxygen, all the musts of the base wines ferment in small oak barrels. To seek the maximum aromatic complexity and expressive power, without losing elegance, the barrel elevation has a duration of only 5 months.
A pair of floating tanks allows the decanting of wines by gravity, from small barrels to aging tanks. After 7 months from the harvest, the cuvée is created. The Vintage Collection
Brut 2016 is the result of a skilful combination of 26 base wines of Chardonnay, Pinot Bianco and Pinot Nero which give the finished product a particular, rich and complex profile. The greater percentage of Pinot Noir gives it power and nobility, further strengthened by a long refinement in the bottle.
The dégorgement takes place in the absence of oxygen, using a unique system in the world, designed and patented by Ca 'del Bosco. This avoids oxidative shocks and further additions of sulphites, making our Franciacortas purer, more pleasant and longer-lived. Finally, each packaged bottle is uniquely marked, to guarantee its traceability.
