The product that best summarizes the type, the territory, the structure, the longevity of the Aglianico wine and the volcanic soils from which it comes.
Harvested at the end of September, the fermentation, which lasted about 20 days, took place in 30 Hl concrete tanks. After racking, the wine rested for 18 months, partly in cement and partly in second passage oak barrels from the Barolo area. Finally it rested in the bottle.
The grapes are harvested manually only when they have reached full sugar and polyphenolic ripeness. Some of the bunches are not de-stemmed. The duration of maceration depends on the years and the characteristics of the grapes, and can vary from 10 to 20 days, at a controlled temperature.
Dedicated to the memory of the founding grandfather, it represents the symbol, history, roots and continuity of our family in the vulture.
