The Capovilla Williams Pear Distillate is soft, intense and powerful, obtained from top quality South Tyrolean pears. These are high quality pears, with a sweet flavor, intense aroma and firm and crunchy pulp grown in Trentino Alto Adige near Bolzano. Vittorio Capovilla selects only the best Williams pears from Trentino. The pears are de-stemmed and fermented as is done with red wines, at the end of fermentation all the fermented must is distilled. This pear distillate is colorless, limpid and crystalline. The Capovilla di Pera Williams distillate obtained is full of aromas, perfumes and an explosion of sweetness in the mouth. The product rests for at least 2 years in stainless steel tanks.
