Spergola is a white grape variety, grown essentially in the foothills and hills of the province of Reggio Emilia.
It was initially called Pomoria or Pellegrina by Vincenzo Tanara, in 1644; two centuries later Claudio Dalla Fossa gives it the name of Spergolina. It is among the varieties to be preferred for cultivation in the hills.
Artisanal distillation
The FRATELLI BRUNELLO Distillery has always used a discontinuous direct steam system, one of the few still in operation, conducted at low pressure and low temperature. It is made up of 4 boilers strictly in copper, as tradition dictates.
The distillation cycle is very slow and involves the processing of small batches of (cooked) marc which lasts about an hour and a half.
Tasting
This Grappa has initially decided olfactory characteristics with a light herbaceous sensation which then leaves room for a particular note of green pepper, bell pepper, licorice on a background of ripe pear.
The taste is soft, with a hint of almond, licorice and a hint of vanilla.
Service
To better appreciate its organoleptic characteristics, this grappa should be tasted in tulip-shaped glasses, at a temperature between 9 ° and 12 °.
