Farfalla Extra Brut Ballabio
Farfalla Extra Brut represents the essence of the Ballabio style. After a long aging in the bottle it is a synthesis of elegance, freshness and complexity. Its balance comes from the Pinot Noir grapes, coming from proprietary vineyards with a predominantly calcareous-clayey structure set on hilly sides between 300 and 500 meters above sea level.
Blending of the Cuvée using, together with the vintage wines, a good 20% of wines from old harvests aged in heat-conditioned stainless steel tanks to give complexity and uniqueness. Tirage with selected yeasts in the company and bottle aging for at least 30 months. Disgorgement and further 2 months of evolution before being put on the market.
